Smoked Salmon, Soft Cheese And Chive Omelette

2 tablespoons vegetable oil
6 eggs beaten
200g soft cheese
1 tablespoon cold water

1. Heat the oil in a large, heavy-based frying pan. Season the eggs with salt and pepper, then pour into the pan and cook over a gentle heat for 4 - 5 minutes until the base is set and the top is almost set.

2. Meanwhile, beat the soft cheese in a bowl with the measurement water until very soft.

3. Spoon the cheese over the omelette and gently spread a little. Arrange the smoked salmon over the top, then scatter over the chives and cook gently for a further 1 minute until the top is warm.

4. Fold one side of the omelette over the other. Serve cut into 4 wedges, with a simple salad, if liked.

A small scale study that was carried out by a researcher from the National Centre for the Health and Development of Children that was stationed in Tokyo, has suggested a frequent use of lotion after first few weeks of baby birth would help maintain the integrity of the baby's immune systems.

The research divided 118 infants into two similar groups, the first group was wiped with glycerine-based moisturizer for 32 weeks while the other group was not wiped with any lotion.


The result showed that 19 infants from the first group received atopik dermatitis - eczema - compared with 28 infants from the second group.

The study, which according to the research was the first of its kind in the world, has the possibility of showing dampness reduces the risk of getting eczema by 30%.

In a statement, the institute has said that a softener prevents skin from dryness and breach, which reveals the immune cells and allows the irritant to enter. This will make the body to increase the production of antibody to fight irritant, which causes overproduction. This overproductrion which causes allergy symptom.

1. Heat the oil in a large, heavy-based frying pan and cook the sausages over a medhium heat, turning frequently, for 10 minutes until browned all over and cooked through. Remove with a slotted spoon. Pour off most of the oil from the pan and discard, leaving about 1 tablespoon. Add the onion and red peppers to the pan and cook, stirring frequently, for 3 - 4 minutes until softened. Add the rosemary leaves and cook fora further 1 minute.

2. Add the drained beans, tomatoes and stock and bring to the boil. Return the sausages to the pan, reduce the heat to a simmer and cook for 10 minutes until the beans and sausages are piping hot.

3. Serve ladled into warmed serving bowls, with warm crusty wholemeal bread, if liked.

1. Place the flour on a plate and season generously with salt and pepper. Toss the fish strips in the seasoned flour and set aside. Place the breadcrumbs on a separate plate and toss with the lime rind and crushed peppercorns. Beat the eggs thoroughly in a shallow bowl.

2. Heat the oil in a large, heavy-base frying pan. Meanwhile, dip each floured goujon in the egg and then in the breadcrumbs, working swiftly until they are all crumbed. 3. While the fish is cooking, for the mayonnaise, mix together the creme fraiche and mayonnaise, then stir in the remaining ingredients and season with pepper. Place in a small serving bowl and serve with the hot goujons.

2 courgettes, trimmed and cut into chunks
1 aubergine, trimmed and cut into chunks
1 large red onion cut into chunks
4 tablespoons olive oil
1 large onion, chopped

1. Place the courgettes, aubergine and onion in a large roasting tin and toss with 3 tablepoons of the olive oil. Place in a preheated oven, 220 C, Gas Mark 7, for 20 minutes until tender and lightly charred in places.

2. Meanwhile, heat the remaining tablespoon of oil in a large, heavy-based frying pan and cook the onion and garlic, over a medium-high heat, stirring frequently, for 3 minutes until softened. Add the tomatoes and cook, stirring occasionally, for a further 10 minutes. Add the tomato puree, herbs and measurement water and bring to the boil, then reduce the heat and simmer oe 5 minutes.

3. While the sauce is cooking, bring a large saucepan of lightly salted water to the boil and cook the fusilli for 10 - 12 minutes until just tender, then drain.

4. Add the roasted vegetables to the tomato sauce along with the drained pasta and toss well together. Serve in warmed serving bowls, with warm crusty bread, if liked.

Why Chopping Onions Makes us Cry

We cry...and sometimes laugh at ourselves ...when we chop onions with tears streaming down our cheeks. Crying usually occurs about 30 seconds after you cut an onion open. The tearing starts to slow down after about five minutes of cutting. Why does this happen ?

A Chemical Reaction

Onions contain amino acid sulfoxides that produce sulfenic acids inside the cells of the onion. When you start cutting an onion, it disrupts the cells and the normal cell enzymes mix with the sulfenic acids and it produces propanethial S-oxide. Propanethial S-oxide is a sulfur chemical that is a gas that floats through the air and into your eyes. When this gas interacts with the water in your tear film, sulfutric acid is produced. This acid is not compatible with your tears and your eyes begin to burn. Your brain says, "There is something in my eye!"


Basic Tear Production

There are two types of tear production that occur inside the eye. Basal tears, the ones that provide basic lubricant to the eyes, and reflex tears, the type of tears we typically think of when we are crying. Reflex tears are produced in response to emotion and some external irritant. An external irritant, such as dust or smoke, triggers nerve endings in the cornea to communicate with the brain which turns on the lacrimal gland. The lacrimal gland, which is under the upper eyelid on the side of your temple, creates reflex tears. Your tear glands begin secreting tears to potentially dilute or wash out the offending agent.

A Tear-Free Onion ?

It is the sulfur compound that gives the onions the characteristic odor and flavor that many of us enjoy. Believe it or not, Crop & Food Research of New Zealand and House Foods Corporation of Japan has develpped genetically engineered onions that do not produce the sulfur compounds that make us tear while chopping them. They created a "tear-free" onion, although they have not been commercialized yet. The onions contain onion flvor without the side effect.

How to avoid tearing up while cutting an onion :


 - Use a very sharp knife. Crushing an onion, instead of cutting it sharply, tends to release more gas.

 - Chill the onion before cutting. When you refrigerate the onion before cutting, you freeze the enzymes from mixing the sulfenic acids and the production of propanethial S-oxide is stopped. As a result, sulfuric acid is not produced when you chop the onions.

 - Wear safety goggles while chopping the onions. You may get some funny looks but it will               definitely keep the acid from getting into your eyes.

 - Turn on a fan. Point the fan toward your work surface so that the fumes are drawn away from you.

 - Cooked onions won't produce this same effect  because the process of cooking the onions inactivate the enzymes needed to make propanethial S-oxide.

 - Soak the onions in water before cutting. The gas will be absorbed into the water.

 - Lighting a candle by your onion chopping board is a good way to avoid tearing excessively. A candle near the chopping board will cause the fumes from the onions to become drawn towards the flame and less will reach your eyes.

 - Cut the root of the onion at the very end. The root contains more enzymes.

 - Use an electric food processor.

 - Do not touch your eyes when you are chopping onions. Make sure to wash your hands thoroughly   after yo are finished.
