Chicken soup, a popular home remedy for the common cold since at least
the 12th century, may really help. The steam from chicken soup may open
up congested noses and throats. Soup also provides fluid, which is
important for fighting infection. Some researchers suggest that
substances in chicken soup reduce the inflammation associated with the
common cold, thus providing some relief of symptoms.
Serves 4
2x400g cans reduced-fat coconut milk
125ml hot chicken stock
1 tablespoon Thai red curry paste
2 boneless, chicken breasts, about 175g each, very thinly sliced
200g mangetout
200g bean sprouts

1. Place the coconut milk, stock and curry paste in a large saucepan and bring to the boil.
2. Add the chicken and cook for 2 minutes, then add the mangetout and bean sprouts and cook for a further 5 minutes until the chicken is cooked through.
3. Serve ladled into warmed serving bowls.
