Special Fried Rice

Family meals ideas ...

Fried rice dishes are standard fare on Chinese food restaurant menus. The side dish comes in a variety of forms ranging from vegetarian preparations to more substantial protein-based options made with shrimp, chicken or beef. The wide scope of forms of the traditional dish translates to an equally wide scope of nutritional values, but consistency among standard ingredients and methods of preparation create a general nutritional range for assessing fat content.


Serves 4

2 tablespoons sesame oil
2 eggs, beaten
8 rindless streaky bacon rashers, snipped into pieces
1 bunch of spring onions, trimmed and roughly chopped
100g small cooked peeled prawns
100g frozen peas
250g ready-cooked long-grain rice
salt and pepper

1. Heat 1 tablespoon of the oil in a large frying pan, pour in the eggs in a thin layer and cook over a medium heat for 1 - 2 minutes until golden and set. Remove and cut into shreds.

2. Add the remaining oil to the pan and stir-fry the bacon and spring onions over a high heat for 2 - 3 minutes until the bacon is browned and the onions softened. Add the prawns and peas and stir-fry for further 1 minutes. Add the rice and stir-fry for 2 - 3 minutes until hot.

3. Add the shredded omelette to the rice and heat through for a few seconds. Season with salt and pepper and serve immdeiately.
