Chicken And Tarragon Burgers

Family meal deals ...

French tarragon herb, also known as dragon wort, is a very popular culinary herb used as flavoring agent, especially in the Mediterranean cuisines. This aromatic perennial growing herb is rich in phytonutrients as well antioxidants that help promote health and prevent diseases.

Botanically, tarragon belongs within the family of Asteraceae, in the genus: Artemisia, and known scientifically as Artemisia dracunculus sativa. The herb is thought to have originated in the Central Asia region, probably in Siberia


Serves 4

500g boneless, skinless chicken breasts, roughly chopped
1 tablespoon wholegrain mustard
3 tablespoons chopped tarragon
1/2 small red chilli, finely chopped (optional )
4 wholemeal buns
Pepper

To serve

Bearnaise sauce from a jar
Rocket leaves tossed in lemon juice

1. Place the chicken in a food processor and whizz until smooth. Transfer to a bowl, add the mustard, tarrgon and chilli and season well with pepper. Mix together until well blended, then shape into 4 patties.

2. Lay the chicken burgers on a grilled rack lined with foil and cook under a preheated high grill for 4 - 5 minutes on each side until browned and cooked through. Split the buns and place, cut-side up, under the grill for the final 1 minute of cooking time.

3. Place a hot burger on the top of each warm bun base and top with a spoonful of bearnaise sauce and a handful of lemon juice-dressed rocket. Cover with the warm bun tops and serve immediately.




Tarragon is a notably excellent source of minerals like calcium, manganese, iron, magnesium, copper, potassium, and zinc. Manganese is utilized by the body as a co-factor for the antioxidant enzyme, superoxide dismutase. Iron is essential for cellular respiration (co-factors for cytochrome-oxidase enzyme) and blood cell production.
