Smoked Salmon, Soft Cheese And Chive Omelette

Family meal plan...

There are many benefits to meal planning for your family, including healthy eating. By learning how to plan weekly meals and eating meals at home, you can control your portions and avoid eating hidden calories. In addition, family meals eaten at home tend to be less expensive and higher in nutrients.
Planning healthy, balanced family meals for the week can be a time saver for even the busiest people. By shopping for your meals once a week, you can save time, money and gas by making fewer trips to the grocery store or drive-thru. Taking some time to learn how to plan balanced meals for your family will save you time—and help you eat better—in the long run.

1. Heat the oil in a large, heavy-based frying pan. Season the eggs with salt and pepper, then pour into the pan and cook over a gentle heat for 4 - 5 minutes until the base is set and the top is almost set.

2. Meanwhile, beat the soft cheese in a bowl with the measurement water until very soft.

3. Spoon the cheese over the omelette and gently spread a little. Arrange the smoked salmon over the top, then scatter over the chives and cook gently for a further 1 minute until the top is warm.

4. Fold one side of the omelette over the other. Serve cut into 4 wedges, with a simple salad, if liked.

Fish and shellfish have been important in human nutrition since prehistoric times. One of the main reasons fish consumption is increasing is the desire to eat more healthily. Of all the different types of fish, salmon has received the most praise for being a nutritional marvel. Salmon are described as anadromous; born in fresh water before spending a large portion of their lives navigating the open sea only to swim back to their birthplace in order to spawn. This extraordinary homing mechanism is said to be attributed to their olfactory memory (memory of smell). A reason why these intelligent, intuitive fish are considered a 'brain food'.
